1 tablespoon oil

1 onion – finely chopped

2 cloves garlic – finely chopped

1 chilli – finely chopped

10 cups of any combination of the following vegetables (broccoli, cauliflower, zucchini, spinach, kale, mushroom) – chopped roughly

1 cup roughly chopped parsley and chives

1L liquid stock (chicken,vegetable)

Salt and pepper to taste

Method:

Saute onion garlic chilli in oil until soft

Add vegetables, add stock (so that vegetables are just covered with stock)

Bring to boil, reduce to simmer and cook until vegetables are soft

Add herbs and combine

Puree with stick blender until thick and smooth

Add salt and pepper to taste

Store in freezer in 2 cup potions and pull out whenever the hunger strikes!

This soup is not only great for weight loss it is highly nutritious. Packed with fibre, vitamins and minerals it will help keep those winter colds at bay too.
